The Auvergne alone accounts for 26% of France’s quality-labelled cheeses (covered by the PDO standard - Protected Designation of Origin).

 

The best known of these include Cantal, Salers, Fourme d’Ambert, Bleu d’Auvergne and Saint Nectaire. Today, they continue to be manufactured in strict observance of traditional cheesemaking techniques.
